Gujarat- sweet food and no liquor!! I understand hangovermania is not meant for this but I couldn’t stop expressing myself. How can a guy like me stay in such a place??? I think…..I deserve an episode in discovery channel’s “I shouldn’t be alive”…blenders pride for 1000rs !!!!!!!!!!!!!!!!! I know I am going crazy but some things which make it worth it

- When you are dealing with gujju people- don’t be human! They just care about your money

- people who like spice, this place is not for you

- Try dal with rice and you will say- “its Payasam”!!!

- They Claim it as Punjabi thali but its more than tandoori rotis and some paneer I guess (but again- I know its about money here but 50 bucks isn’t a small amount..huh)

- South Indian dishes in Gujarat- GOD!! Why did you chose kerala!!! And I know you are happy there….. And you will be happy!!!!

On a happy Saturday night you get alcohol and start partying with your friends! You discover the height of ecstasy with booze and smoke in the room but all of a sudden you start getting blind – nausea and feels like head is hanging upside down. You don’t know what shit is going into your body. You close your eyes and ponder if Schumacher is the driving the earth in F1. Even before you realize and recollect your mind, you see loads of vomit around you!! The last thing you remember is your friend changing your clothes and feed you with some food. Your breathing process goes slow and so is the heart beat. The next morning you feel sorry when you look at your friend who is standing in front of you with a sheepy smile and that dirty look makes you feel guilty! Your head is still spinning and your friends suggest you to take a cold shower, lemonade, and yoghurt, some more alcohol and bla bla bla….but NOTHING IS GOING TO WORK!!

This happens with everybody who is new to this circuit. Don’t panic- its alcohol poisoning!! It’s very simple- YOU NEED MEDICAL HELP! Your body can’t take much alcohol! Still you can try this to avoid such situations by following these simple rules:-

Rule number1 – avoid boozing in closed walls. Open gardens with fresh air makes you feel like god
Rule number2- don’t take more than one drink per hour
Rule number3- alcohol makes you smoke more – keep a record of your smokes.
Rule number5- replace junk stuff with fresh fruits like pomegranate, pineapple or fresh green salad
Rule number6- keep some bananas and eggs for the next day to increase metabolism and digestion
Rule number7- don’t listen to loud music for long hours
Rule number8- avoid long hours of phone talk
Rule number9- never accept alcohol related challenges unless you are a kind of Irish who thinks alcohol is like milk to you
Rule number 10- drink a glass of water before you go to sleep and make sure you have some beside you

And your doctor is going to say this- QUIT BOOZING and play sudoku!!

Deadly mix- don’t try this alone!

Take any premium whisky (not regular) and instead of soda/water/drinks, mix with beer. Don’t take more than 3 pegs to avoid the 2 days and 3 night’s hangover. Keep some handy peanuts with you- best in alcohol absorption. I tried this many times and it’s a really deadly mix. Don’t forget to keep a water bottle next to you before sleep. For best results- wait for at least 30 minutes before making the next drink and don’t even think of driving if you manage to finish the 4th. Every sip will melt down the flesh from throat and stomach so it’s not recommended for social drinkers and minors. Happy boozing!

Mahua Daru!!! Truly Desi!!

It took 3 years for me to get the guts to sip the favorite drink of Baiga Tribal of Madhya Pradesh. Although I am born there and stayed for almost 20 years with those Tribal, it was in October 2006 I decided to taste MAHUA DARU. Unbelievable drink! I bet 4 glasses are enough to get a mad gorilla down to its knees. I have tried many types of liquors but this one stands unique. It’s made with a flower called MAHUA. Tribal people pluck these flowers in autumn and save the stock for the rest of the year. It’s pretty similar the way RICE BEER is made but the taste differs when MAHUA is added to the flame. Tribal people love MAHUA and they spend their savings on it religiously. The taste and intensity of MAHUA depends on the person who makes it! I have tried it with different people and got different flavors every time. WARNING- Some confessed mixing urea chemical in the drink and there are reports of immediate deaths after consuming it!!!! Don’t dare to smell it- it will shake both your small and large intestine and to give a brief on the after sip result- you will get the enthusiasm of beating Alexander in his last world conquering fight after 2 glasses and hunger of a hippopotamus after 4^th. However you will be surprised to know the next morning that you danced naked in public and kissed a swine thinking it’s your neighbor’s wife!
You may consume it in the morning if you want to die with dehydration and spoil the mood for the whole evening. The best time to taste and cherish the unique MAHUA is winter. Honestly blogging- 3 glasses per night for 3 years and your family will be happily settled with the insurance money! Folks whenever you visit Kanha National Park or Bandhavgadh National Park- the second next exciting thing after you catch the glimpse of the royal tiger is trying MAHUA DARU made by Baiga Tribal!! Truly TOXIC!!

COCONUT WINE

1 lb dried coconut
1 lb rice
1 lb pitted dates
2-1/2 lbs granulated sugar
1-1/4 tsp acid blend
1 tsp yeast nutrient
1 gallon water
Sauterne wine yeast

Bring 1 quart water to boil and add rice; boil for 3 minutes. Meanwhile, chop the dates and mix then with the coconut in a boiler. Strain the rice, adding the water from it to the boiler containing the coconut and chopped dates. Bring to a boil and hold for 15 minutes. Strain the water over the sugar, yeast nutrients and acid blend and stir until dissolved completely. Allow to cool to room temperature, transfer to primary and add activated yeast. Cover and ferment until initially vigorous fermentation subsides, then transfer to secondary and attach an airlock. After 3 months, rack into clean secondary with crushed and dissolved Campden tablet, top up and refit airlock. Wait 3 additional months and rack, top up and refit airlock again. After additional month, stabilize, sweeten if desired and rack into bottles. [Adapted from recipe by C.J.J. Berry]

Three Easy Tequila Cocktails

1 ¼ oz. Hornitos Anjeo
2 oz. fresh sour
1 whole muddled plum
1 drop liquid smoke
1 tsp. fig jam
Shake and pour over ice

Tequila Roja
1 ¼ oz. Tres Generations Plata
1 tsp orange marmalade
½ oz. Asian hot chili sauce
1 oz. fresh mango puree
½ oz. orange juice fresh squeezed
2 oz. fresh sour
Shake, strain into cocktail glass. Garnish with a thin slice of mango.

Tequila Eve

5 large mint leaves
½ juiced lime
1 cup mixed white and red seedless grapes
1 oz. elderflower cordial

VODKA TYPES!

Kubanskaya - Vodka flavored with an infusion of dried lemon and orange peels.
Limonnaya - Lemon-flavored Vodka, usually with a touch of sugar added.
Okhotnichya -"Hunters" Vodka is flavored with a mix of ginger, cloves, lemon peel, coffee, anise and other herbs and spices. It is then blended with sugar and a touch of a wine similar to white port. A most unusual Vodka.
Pertsovka -Pepper-flavored Vodka, made with both black peppercorns and red chili peppers.
Starka - "Old" Vodka, a holdover from the early centuries of Vodka production, which can be infused with everything from fruit tree leaves to brandy, Port, Malaga wine, and dried fruit. Some brands are aged in oak casks.
Zubrovka - Zubrowka in Polish; Vodka flavored with buffalo (or more properly "bison") grass, an aromatic grass favored by the herds of the rare European bison.

This wonderfully glamorous dish is perfect for a dinner party because you can do so much preparation well ahead of the arrival of your guests.

1kg beef fillet
30mls Knockando 12 year old Malt Whisky
butter and olive oil for browning the beef

Mushroom Filling
125g mushrooms, finely chopped
2-3 shallots, finely chopped
salt and freshly ground black pepper
1 large sprig of thyme, with the leaves stripped off the stems (or 1 large pinch of dried thyme)
1 tablespoon fresh flat leaf parsley, finely chopped
350g puff pastry (shop bought is fine, but look for the one made with butter
1 egg, beaten, to glaze pastry
Whisky Sauce
500mls beef stock
200mls red wine
20mls Knockando 12 year old Malt Whisky
juices from the rested fillet*
1 teaspoon redcurrant jelly
1 teaspoon mushroom ketchup
salt and freshly ground black pepper

Preheat oven to 220C/Gas7
Start this dish 3 or 4 hours ahead of serving time.
Start by trimming the fillet free of any fat, brush with some of the whisky and set aside for an hour.
Heat the butter and olive oil in a large pan until very hot and brown the joint on all sides, and then roast the beef on a rack in the oven for about 15 minutes until part cooked. Remove the beef from oven and set aside until cold. Reserve any juices from the fillet for the sauce.*

Gently fry the shallots and mushrooms in the pan the meat was browned in, adding a little butter if necessary, season with the remaining whisky, salt and black pepper and stir in the thyme and parsley. Allow this mixture to cool until you are ready to complete the dish.

You can prepare up to this point as much as 24 hours in advance, but the beef must be brought to room temperature before wrapping in pastry and cooking or the meat will not cook through in the cooking times given.

About 45 minutes before you want to serve the beef, heat the oven to 220C/Gas 7 and begin by rolling out the pastry into a rectangle slightly longer than the joint and wide enough to cover the beef and have sufficient to tuck in and seal. Spread the mushroom mixture in the centre of the pastry and place the beef on top and season lightly with salt and pepper. Cut out 4 squares from each corner of the pastry and set them aside. Brush the edges of the pastry rectangle with beaten egg and wrap them over the beef. (make sure you don’t have too much double thickness because the pastry on the bottom won’t cook in time) Turn the beef parcel over so that the sealed edges are on the bottom. Transfer to a lightly oiled baking sheet and brush with the egg glaze, decorate with the pastry trimmings and glaze them as well. Bake for about 30 minutes until golden brown. You can test to see if the meat is cooked with a meat thermometer or failing that you can insert a metal skewer into the beef and if it comes out cold it is not cooked, if it is warm it is rare and if it is hot it is well done.

Meanwhile make the sauce. Place the stock in a pan, bring it to the boil then reduce it by a half, add the red wine and reduce again by about a quarter, now add the remaining ingredients, bring back to the boil and check the seasoning.

To serve
Cut the Croûte into thick slices, drizzle some of that glorious sauce around and serve with buttered parsley potatoes and vegetables. Absolutely wonderful!

Rice wine is an alcoholic beverage made from rice. Unlike wine, which is made by fermentation of naturally sweet grapes and other fruit, rice "wine" results from the fermentation of rice starch converted to sugars. This process is akin to that used to produce beer; however, beer production employs a mashing process to convert starch to sugars whereas rice wine uses the different amylolytic process. Alcoholic beverages distilled from rice were exclusive to East and Southeast Asian countries, with knowledge of the distillation process reaching India and parts of South Asia later through trade.

Rice brew typically has a higher alcohol content (18-25%) than wine (10-20%), which in turn has a higher alcohol content than beer (3-8%).

Some types of rice wine include:

* Amazake - low-alcohol Japanese rice drink
* Ang Jiu - Chinese red rice wine, popular among the FooChow Chinese (Malaysia, China)
* Brem - Balinese rice wine
* Cheongju - Korean rice wine
* Cơm rượu - A Vietnamese dessert consisting of rice balls in mildly alcoholic, thick, milky rice wine
o Beopju - a variety of cheongju
* Choujiu - A milky glutinous rice wine popular in Xi'an, China
* Gamju - A milky, sweet rice wine from Korea

Snake wine (rượu rắn in Vietnamese) is an alcoholic beverage that includes a whole venomous snake in the bottle. It originated in Vietnam and can be found around Southeast Asia. The snakes, preferably venomous ones, are not usually preserved for their meat but to have the snake poison dissolved in the liquor. However, the snake venom is denatured by the ethanol; its proteins are unfolded and therefore inactivated.

There are two varieties of snake wine:

* Steeped: A large venomous snake can be placed into a glass jar of rice wine, often with many smaller snakes, turtles, insects, or birds, and left to steep for many months. The wine is drunk as a restorative in small shots or cups.
* Mixed: Body fluids of snake are mixed into wine and consumed immediately in the form of a shot. Snake blood wine is prepared by slicing a snake along its belly and draining its blood into a mixing vat with rice wine or grain alcohol. Snake bile wine is done through a similar method by using the contents of the gall bladder.

Balthazar An oversized wine bottle which holds the equivalent of 12 to 16 standard bottles.

Bottle 750 milliliters of wine - this standard bottle size. It is sometimes referred to as a "fifth". Bottle shapes vary depending on the winery's preference or the type of wine.

Bottle Sickness A temporary condition characterized by muted or disjointed fruit flavors. It often occurs immediately after bottling or when wines (usually fragile wines) are shaken in travel. Also called bottle shock. A few days of rest is the cure.

Bottled By Means the wine could have been purchased ready-made and simply bottled by the brand owner, or made under contract by another winery. When the label reads "produced and bottled by" or "made and bottled by" it means the winery produced the wine from start to finish.

Estate-bottled A term once used by producers for those wines made from vineyards that they owned and that were contiguous to the winery "estate." Today it indicates the winery either owns the vineyard or has a long-term lease to purchase the grapes.

Half-bottle Holds 375 milliliters or 3/8 liter.

Imperial An over-sized bottle holding 4 to 6 liters; the equivalent of eight standard bottles.

Jeroboam An over-sided bottle with two sizes. It is the equivalent of six bottles of wine. Or with Champagne, a jeroboam holds four bottles.

Double Magnum The equivalent of four bottles – twice the size of a magnum holding 3.0 liters.

Methuselah An extra-large bottle holding 6 liters; the equivalent of eight standard bottles. It is usually used for sparkling wines.

Nebuchadnezzar A giant wine bottle holding 15 liters; the equivalent of 20 standard bottles (almost four gallons).
